{ Sausage : Dinner Tonight }

Full-flavored sausage makes any supper a hearty meal.

Menu 1: (Serves 4)

• Penne with Sausage, Eggplant, and Feta
• Bitter Greens with Olive Vinaigrette
Combine 2 tablespoons olive paste, 2 tablespoons red wine vinegar, 1 tablespoon extra virgin olive oil, 1 teaspoon sugar, 1 teaspoon minced fresh parsley, and 2 teaspoons prepared mustard. Combine 6 cups Italian Blend salad greens and 2 tablespoons pitted, sliced kalamata olives. Toss with vinaigrette.
• Lemon Sorbet

Game Plan
1. Peel and cube eggplant, mince garlic, and chop parsley for pasta and salad.
2. Boil water for pasta.
3. While sausage cooks:
• Cook pasta
• Prepare vinaigrette for salad

Menu 2:(Serves 4)

• Chicken Breasts Stuffed with Italian Sausage and Breadcrumbs
• Sauteed zucchini and tomatoes
Heat a skillet over medium-high heat. Coat pan with cooking spray. Cut 1 pound zucchini into (1/4-inch thick) slices, add zucchini and 1/2 cup chopped onion to pan. Saute 5 minutes or until vegetables are tender. Add 1-1/2 cups chopped tomato, cook 5 minutes. Remove from heat, stir in 1/2 teaspoon dried basil, 1/4 teaspoon salt, and 1/4 teaspoon pepper.
• Mixed greens with bottled Italian dressing

Game Plan
1. While sausage cooks:
• Pound chicken
• Slice zucchini, and chop onion and tomato
2. Stuff chicken breasts with sausage mixture.
3. While chicken cooks:
• Cook zucchini
• Toss greens with dressing

Menu 3:(Serves 4)

• Jambalaya with Shrimp and Andouille Sausage
• Green beans with remoulade
Cook 1 pound trimmed green beans in boiling water 5 minutes, drain. Combine 1 tablespoon light mayonnaise, 1 to 2 tablespoons Creole mustard, 1 tablespoon lemon juice, 1/4 teaspoon Worcestershire sauce, 1/8 teaspoon paprika, and 1/8 teaspoon celery salt. Toss with green beans.
• Caramel praline crunch frozen yogurt (such as Edy's/Dreyer's)

Game Plan
1. Chop vegetables and slice sausage
2. While sausage mixture cooks:
• Peel shrimp
• Boil water for green beans
While jambalaya simmers and green beans cook:
• Prepare remoulade for green beans
