{ Ground Meat : Dinner Tonight }

Ground meats gain intrigue beyond burgers when they take on international flavors.

Menu 1: (Serves 4)

• Meatballs and Rice Noodles
• Sweet and spicy cucumbers
Combine 4 cups thinly sliced cucumber, 3 tablespoons red wine vinegar, 3/4 teaspoon sugar, 1/4 teaspoon salt, and 1/4 teaspoon crushed red pepper, tossing gently to coat.
• Fresh mango with toasted coconut

Game plan:
1. While water for noodles comes to a boil:
• Prepare meatballs
• Prepare cucumbers
• Peel and slice mango
2. While meatballs cook:
• Prepare sauce for meatballs and noodles
• Chop herbs
• Toast coconut

Menu 2: (Serves 4)

• Pork and Fennel Ragu
• Romaine salad
Combine 2 tablespoons light mayonnaise, 1 tablespoon Dijon mustard, 2 teaspoons fresh lemon juice, 1 teaspoon red wine vinegar, 1/2 teaspoon Worcestershire sauce, and 2 minced garlic cloves in a large bowl, stirring with a whisk. Add 5 cups torn romaine lettuce, tossing gently to coat.
• Focaccia

Game plan:
1. While Ragu cooks:
• Bring water for pasta to a boil
• Prepare salad dressing
2. While pasta cooks:
• Toss salad
• Warm Focaccia

Menu 3: (Serves 4)

• Gyros
• Greek salad
Combine 2 teaspoons olive oil, 1 teaspoons fresh lemon juice, 1/2 teaspoon salt, and 1/4 teaspoon freshly ground black pepper, stirring well with a whisk. Combine 6 cups mixed salad greens, 2 cups chopped tomato, and 1/4 cup crumbled feta cheese in a large bowl. Add oil mixture, toss gently to coat. Serve immediately.
• Vanilla yogurt with honey

Game plan:
1. While broiler heats:
• Prepare meat mixture
• Drain cucumber and onion for sauce
2. While meat cooks:
• Prepare sauce for gyros
• Prepare salad

Menu 4: (Serves 4)

• Larb
• Hot cooked rice
• Spicy sesame snow peas
Heat 1/2 teaspoon sesame oil in a nonstick skillet over medium-high heat. Add 1/2 pound trimmed snow peas, sauté one minute. Add 1 tablespoon rice vinegar, 1-1/2 teaspoon low-sodium soy sauce, and 1/4 teaspoon crushed red pepper, stirring to combine. Cook 4 minutes or until peas are crisp-tender. Sprinkle with 2 teaspoons sesame seeds.

Game plan:
1. While water for rice comes to a boil:
• Combine juice mixture for larb
• Chop mint
• Quarter and halve cabbage
2. While rice and turkey cook:
• Prepare snow peas
